Tea Processing
The story of tea begins in China, when the Chinese emperor Shen Nung discovered some Camellia sinensis tree in his boiled drinking water. The infusion created what we now call tea.

Let's see how tea is made in the modern days.
Harvesting
In the spring and summer, there will be a fresh 'flush' (a harvest in terms of tea is a flush) of young leaves and these are the perfect ones for tea making and the most prized by tea growers.

Tea leaves are hand-plucked from the tea garden and placed into large wicker baskets.
Inspecting leaves quality
The buckets are brought to tea masters, where leaves are inspected and weighed to ensure quality.

In this sorting stage, tea leaves are examined based on size, type and appearance, and sorted into white, green, black, pu-erh and oolong categories.
Processing
All true teas are derived using the same leaves—the difference in color, aroma and flavor arises from the ways in which they are processed.

Leaves can be withered, dried, oxidized, fired and shaped depending on the desired tea type.
Packaging
This step is quite important since it could affect the preservation and quality of the tea. Different materials such as cans, papers, or plastic are carefully chosen.

Tea makers present their tea and provide storage history of tea.

Tea cupping is a process of tasting and evaluating the quality of loose leaf tea.

Even tea from the same shipment, tea garden and processing batch can differ in taste and tea cupping is an ideal way to ensure quality control.
